The root

What ube is, and what it gives you.

Ube is a yam. Cooked, it turns this exact color — vivid, gently sweet, nothing like a grape soda. Purpply puts that root in the cookie, the cream, the chocolate, and in a tin that is only powder.

  • A yam, not a dye

Ube is Dioscorea alata, a purple yam grown across the Philippines and Southeast Asia. It is not taro, and it is not the purple sweet potato. The color is in the flesh.

  • Why it is purple

That violet comes from anthocyanins, the same family of pigments in berries. Cooked or dried, the root stays purple. Nothing has to be painted on.

  • What you actually get

Ube is a starchy food: complex carbohydrate, some fiber, plus potassium and vitamin C. The powder is dried root, not a supplement, and it is not medicine.

  • How it tastes

Softly sweet, a little nutty, with a vanilla-coconut hush. Strong enough to tint a cup of milk. Quiet enough to sit inside a cookie.

The tin

Recipes for the powder.

The tin is 100% ube, nothing else. Stir it in as a paste first so it does not clump. Start with the amount below, then add more if you want a deeper purple.

Pure ube powder tin

1 cup · 2 teaspoons powder

Ube latte

Ingredients

  • 2 teaspoons Purpply pure ube powder
  • 200 ml milk, dairy or oat
  • 1 teaspoon sugar or honey, if you want it sweeter

Method

  1. Warm the milk until it steams. Do not boil it.
  2. Put the powder in the cup and stir in a splash of the milk until there are no dry specks.
  3. Pour in the rest of the milk. Sweeten if you like. The cup should look like the tin.
